Marauder Crunch Tacos

Ingredients

Tomato Based Salsa

Ingredients:

1 can whole peeled tomatoes with their juices

1 cup Pete's Green's cilantro, loosely packed

1/2 small red onion, roughly chopped

1 jalapenos, roughly chopped with the seeds and white membranes removed

2 cloves garlic, roughly chopped

1 lime juiced

1/2 teaspoon salt

 

 

Avocado Yogurt

Ingredients:

1 each Avocado cut in half and pit removed

1 cup plain Green Mountain Creamery non-fat yogurt

1 half lime juiced

1/2 cup water

1/2 bunch Pete's Greens Cilantro

 

Taco Slaw

Ingredients:

1/4 head of cabbage, thinly sliced

1 tomato diced small

1/2 bunch Pete's Greens Cilantro, rough chop

1 small can of black olives, sliced

2 limes, juiced

1/4 cup olive oil

1/4 teaspoon cumin

12 ounced Vermont Cabot Cheddar

Taco Shells

Ingredients:

12 each hard taco shells

12 each soft shell tacos-Vermont Bean Crafters 10 inch

1 can vegetarian refried beans

Seitan Taco Meat Substitute

Ingredients:

15 ounce seitan

1 pack taco seasoning

1 ounce vegetable oil

 

Preparation Instructions

Tomato Based Salsa

Directions:

1. combine all ingredients in a blender or food processor. Stir with a spatula to mix the ingredients together and be sure they blend evenly.

2. Pulse unitl the salsa is as chunky or smooth as you like it.  Scrape down the sides as needed or stir the salsa with a spatula if there are large pieces not making it to the blade at the bottom.

3. Taste and adjust seasonings. Place in a squeeze bottle for assembly.

 

Avocado Yogurt

Directions:

1. Clean out avocado into a blender then add all other ingredients except the cilantro.

2. Pulse on medium speed until smooth. Add cilantro and pulse just a little more.

3. Place in squeeze bottle until ready for assembly.

 

Taco Slaw

Directions:

1. Place cabbage, tomato, cilantro, and black olives in a bowl and toss with salt and pepper

2. In another bowl mix lime juice, olive oil and cumin to make dressing.

3. Dress slaw to desired taste. Set aside for assembly.

4. Shred cheese and keep separate from slaw to assembly of tacos.

Taco Assembly

Directions:

1. Smear beans on soft shell evenly then fold over hard shells

2. Bake in oven to warm through. Set aside for assembly.

 

Seitan Meat Substitute

Directions:

1. Run seitan through food processor till consistency of groun is met.

2. Heat oil inpan until almost smoking. Plce seitan in pan and cook until golden brown on one side. Don't stir toom much otherwise you will not get the color you are looking for.

3. Once you have the color you are looking for, add the seasoning stir to mix and add a little water if dry.

4. Set aside for assembly.

To Assemble Tacos

Take on shell, add the seitan in an even lary, then one ounce of cheese. Once that is put together add the slaw to the top and garnish with salsa and avocado cream.
