Gluten-Free Apple Oatmeal Pancakes

Ingredients

  • 2 large eggs
  • ¼ c olive oil
  • 2 c 1% milk
  • 1 t vanilla
  • 1 1/3 c flour
  • 1 c oatmeal flour (puree oatmeal in blender)
  • 2 T maple syrup
  • 1 ½ t baking powder
  • ¾ t salt
  • ¾ t Xanthan gum
  • 2 finely chopped apples
  • 1 t cinnamon

Preparation Instructions

Whisk eggs, oil, milk and vanilla
In a separate bowl, whisk together the dry ingredients. Stir in the egg mixture.
To make pancakes: Preheat the griddle to medium (350F), greasing it lightly.  Scoop the batter by ¼-cupfuls onto the griddle.
Cook pancakes for 1-2 minutes, flip after air bubbles have popped. Flip ad cook for 1-2 minutes on the other side.
Serve hot with butter and maple syrup.
