JACk’d Up Taco Bites

Ingredients
Simple Cornbread
- ½ cup cornmeal
- ½ cup chickpea flour
- ¼ tsp salt
- 1 tsp baking powder
- ¼ cup margarine
- 1 egg
- ½ cup milk
TACO BITES
- 1 onion (diced)
- 2 cloves garlic (minced)
- 1 can 15 oz Black Beans (drained/crushed)
- ¾ cup toasted Simple Cornbread crumbs
- ½ cup cooked white rice
- ½ cup shredded Jalepeno Cheese
- 1 pkt taco seasoning (low salt)
- 2 eggs
- 1 Tbl. Oil (for cooking)
Simple Salsa
- 1- 14 oz can tomatoes ( drained/diced/chopped fine)
- 1-4.5 oz can green chilies (drained- chopped fine)
- 1 clove garlic- minced
- 1 green onion -chopped
- 1-½ tsp olive oil
- 1 tsp red wine vinegar
- ⅛ tsp. oregano
- ⅛ cup chopped cilantro
Preparation Instructions
Simple Cornbread
- Mix dry ingredients together in bowl
- Cut in margarine until blended in.
- Stir in milk and egg
- Mix until blended.
- Place in greased/warmed cast iron Dutch Oven & cover to cook.(app 350 degrees)
- Cook on low heat for 15-20 mins. until cooked through
- When the cornbread is done, crumble into crumbs and toast in a dry frypan over medium heat- stirring constantly. Set aside/let cool when done.
TACO BITES
Saute onions and garlic in a fry pan using 1 tsp of oil. Combine all above ingredients in bowl. Shape into “bites” ( a flattened meatball) about 1 rounded tablespoon each. Coat each bite with toasted cornbread crumbs. Cover & cook in frypan with remaining oil over med/low heat. for 5-7 mins. Turn over taco bites and cover & cook an additional 5-7 mins. Cornbread crumbs should be crispy. Serve with Simple Salsa /Sour cream dip.
Simple Salsa
Combine ingredients. Mix with ½ cup sour cream. Dip your taco bites and enjoy!
