Maple Chili Stuffed Sweet Potatoes

Ingredients

Chili

1 T Olive Oil

1 onion

2 cloves garlic

1 bell pepper

2 carrots

4 cups of jacobs cattle beans

1 28 oz can of stewed tomatoes

2 T chili powder

1 tsp cumin

1 tsp salt

1/4 tsp black pepper

Potatoes and toppings

6 large sweet potatoes

1.5 cups of extra sharp cheddar cheese

1 cup of sour cream

1/2 chopped parsely

 

 

Preparation Instructions

Potatoes

Cook sweet potatoes in oven at 400 degrees for 40-50 minutes (poke holes in potatoe)

Prepare Chili

Beans will have been cooked and rinsed ahead of time

Saute onions and garlic in oil until transluscent

add carrots and bell pepper until tender

add beans, cumin, maple syrup

add tomatoes, chili powder, salt and pepper

simmer

Take cooked potatoes slice them down the middle remove 1/2 of the sweet potato and scoop in chili til just overflowing.  Sprinkle shredded cheese over the chili, add dollop of sour cream and sprinkle parsely.  Serve hot
