Broccoli Cheddar Soup with Cheddar Biscuits

Ingredients

Christie's critters broccoli cheddar soup with cheddar biscuits
2 carrots
1 onion
2 stalks celery
3 cloves of garlic
2 large potatoes
Salt
Pepper
1/2 tsp dried thyme
3 cup broccoli
Butter
3 cup vegetable broth
Flour
3 cups 2% milk
 1/2 Cup Half & half
1/2 cup Parmesan cheese
2 cups cheddar cheese

Cheddar biscuits
1 3/4 C flour
1/2 tsp salt
1 tsp sugar
1/2 tsp baking soda
2 tsp baking powder
5T butter
3/4 C buttermilk
1 C cheddar cheese

 

Preparation Instructions

Soup

In pan melt 4T butter. Add diced celery, carrots, garlic and onion. Sauté 10 minutes. Add vegetable broth, potatoes, salt, pepper and thyme. Cover and boil another 15-20 minutes, adding chopped broccoli for the last 5 minutes.
In another pan, melt 4T butter. Add 5 T flour. Stir non stop. Slowly add 3 cups 2% milk whisking non stop. Once this  is thick, add 1/2 cup of half & half. Continue to stir. When ready, add to vegetable mixture. Add both cheddar cheese and Parmesan. Stir.

Cheddar biscuit

Mix dry ingredients together
Cut in butter
Add buttermilk
Add cheese
Knead dough on flour surface. Cut biscuits.
Cook in oven at 350 degrees 15 minutes.
