Farm Fresh Frittata

Ingredients

Ingredients:

12 eggs

2 -3 potatoes

¼ cup milk

Sliced mushrooms

Roasted cherry tomatoes (previously roasted and frozen in season)

1-2 onions, sliced

1 cup Extra Sharp Cabot Cheddar cheese

salt and pepper to taste

 

 

Preparation Instructions

Directions:

1. In a saucepan bring water to a boil.

2. While the water is heating, quarter and thinly slice potato.

3. Parboil the potato slices by placing in boiling water for 2 minutes.

4. Caramelize the onion by sauteeing in a small amout of olive oil until browned.  Remove from the pan.

5. Saute mushrooms in a small amount of olive oil.

6. Place potato slices in the bottom of a baking pan, top with caramelized onion, sautéed mushrooms, roasted tomatoes.  Pour whisked egg over vegetables.  Sprinkle with grated cheese.  Season with salt and pepper.

7. Bake in a preheated 375 oven for 30- 35 minutes or until the egg is set.
