TASTY TATER ROUNDS
Ingredients
3LBS SWEET POTAOTOES SHREDDED, 2 CUPS GARBANZO BEANS,1 SWEET ONION CHOPPED, 1 CUP GRATED PARMESAN CHEESE, 1/4 TEASPOON CINNAMON
2 TEASPOON FRESH GARLIC, 2 TEASPOON GINGER, 1 TEASPOON CUMIN, 1 TEASPOON CORIANDER, 1/4 CUP BROWN SUGAR, 1 CUP FLOUR,
1/2 CUP OIL, 2 TEASPOON SALT, 2 TEASPOON BLACK PEPPER, 2 EGGS,
Sauce #1: Chipotle/Ketchup- 1/2 cup chipotle 3/4 cup ketchup mix well
Sauce #2 Maple/Pineapple Puree- Blend in food processor 1 Cup Pineapple Tidbits, 1/2 Cup Vt maple Syrup 1/4 Teaspoon Ground Nutmeg
Serve on side in 2 oz Soufle Cup
Preparation Instructions
Evenly spread potatoes on sheet pan sprayed with vegelene salt and pepper lightly. Bake for 15 minutes or until slightly tender, Do not over cook.
When done cool quickly. In food processor puree all remaining ingredients and cool quickly. Combine potatoes and puree in bowl and cool.
Place parchent on sheet pan and spray with vegelene. Using #40 disher/scoop place on pan one inch apart. Cover with second sheet of parchment then
use another sheet pan and press down to form Rounds. Bake for 15 to 20 minutes. Sauce #1 Chipotle/Ketchup #2 Maple/Pineapple Puree
Garnish and serve warm as Side Dish.
