Tortilla de Patatas

Ingredients

3lbs potatoes

12  eggs

1/2 cup of cream

1 1/2 tsp salt, divided

1/2 tsp black pepper

4 tbsp butter

2 tbsp olive oil

1 spanish onion (or 2lg yellow onions)

2 cups fresh spinach

1 red pepper

Nutmeg

Cayenne

 

 

Preparation Instructions

Dice onions, medium dice

Peel and dice potatoes, large dice

Roast and peel red pepper

 

Heat 12" skillet on med-high with butter and oil.

Add onions and potatoes, 1 tsp salt and 1/2 tsp pepper. 

Sautee until soft and potatoes can be pierced with a fork.

Dice or julienne red pepper and add to skillet with spinach.

Cook 4-5 mins.

 

Crack eggs into large bowl

Add cream, 1/2 tsp salt/ pinch of nutmeg, pinch of cayenne

Whisk well and add to pan.

Reduce heat to low for 3 minutes and then move to pre-heated 350° oven for 30 minutes

OR cover and reduce heat to low for 10 minutes.  Heat second pan slightly, invert over tortilla and flip mixture over into new pan.  Returning to low heat for 10-15 more minutes.

 

Invert onto plate or platter.  Serve.
