Vermont Potato Skillet

Ingredients
3-4 med potatoes
1 sweet potatoes
1 lg onion
3 cloves garlic minced
Salt and Pepper to taste
½ c Cheddar cheese grated
6 eggs
4 Scallions
1 Red bell pepper, minced
4T VT. Butter
Rosemary , thyme (optional)
Paprika
¼ cup finely minced Parsley
1 1/2 Cups Black Beans
Preparation Instructions
Slice and sauté potatoes, sweet potatoes and onions in VT butter. Add minced garlic, salt, pepper, minced bell peppers and scallions and cook until tender but not mushy. Add Black beans to mixture. Scramble 6 eggs and pour into potato mixture. Stir mixture until blended and add grated cheddar cheese . When cheese has melted remove to plates and garnish with parsley and ground paprika.
