Black Bean Veggie Burger

Ingredients

For Patty

12 oz of black beans, drained and rinsed

1 green bell pepper cut into 2 inch pieces

¾ onion, cut into wedges

1 tablespoon of garlic

1 egg

1 tbsp chili powder

1 tbsp cumin

1 tsp of sriracha

½ cup of bread crumbs

 

For construction of burger

Cabot Cheddar

1 tomato

1 head of lettuce

mayonnaise

Bread Bun (8oz burger)

Slider buns (2oz burger)

Preparation Instructions

  1. Cover a baking sheet with aluminum foil. Lightly oil the baking sheet.
  2. In a medium bowl, mash 8oz of black beans until thick and pasty.
  3. Cut the onion into wedges.
  4. Cut green pepper into 2 inch pieces.
  5. In a food processor, finely chop bell pepper, onion, and garlic with 4oz of black beans. Then stir mixture into mashed beans.
  6. In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
  7. Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together.
  8. Form bean mixture into patties and cook in 350*F oven for 10-12 minutes each side. Burger will be ready when internal temperature is above 160*F
  9. Serve with cheese, mayonnaise, tomato, lettuce, and buns.
