Egg in a Nest

Ingredients

Ingredients:

20 oz. Local Potatoes (low moisture) 

12 Local Eggs

4 oz. Local Feta Cheese

1 cup Local Cheddar Cheese

4 cups Local Spinach

2 oz. Sundried Tomato

Salt to taste

Pepper to taste

Garnish Chives​

Preparation Instructions

Procedure:

Preheat oven to 350F.

Grate the potatoes into a large bowl.

In the large bowl, combine the potato, ½ cup feta cheese, and salt + pepper. Grease a 12 cup muffin tin with cooking spray. Divide the potato mixture evenly the muffin cups. Use your fingers to pack them tightly and shape them into nests.

Bake for 25 minutes or until the edges have browned.

While the nests are browning, chop the spinach and sundried tomatoes over medium heat until the spinach is wilted. Turn off heat.

Remove the browned nests from the oven and add the spinach and sundried tomato. Be sure the leave enough room for the egg to fit.

Crack a small egg into each nest. Top with a sprinkle of cheddar cheese. Bake at 350F until the egg whites set, about 12-15 minutes. Cool for 5 minutes before removing from pan.

Plate then garnish with finely sliced chives cut on a bias.
