Sweet Potato Toast with Applesauce Hummus

Ingredients

3 apples

¼ c water

½ t Apple pie spice

1t maple syrup

1T sunflower butter

1T honey

½ t cinnamon

Juice of ½ lemon

15oz garbanzo beans

4 sweet potatoes

1T olive oil per 4 slices of sweet potato (6 T)

 

2 large carrots spiralized

1c sunflower seeds

2c arugula

3 Apples

1 container Strawberries

 

2T maple syrup

2T olive oil

4t honey

1T Apple cider vinegar

1t lemon juice

Sweet Potato Toast with Applesauce Hummus

Hummus

3 apples

¼ c water

½ t Apple pie spice

1t maple syrup

1T sunflower butter

1T honey

½ t cinnamon

Juice of ½ lemon

15oz garbanzo beans

 

Cut, peel and slice apples into small pieces

Add apples, water, and apple pie spice to a saucepan cook until the apples are soft stirring frequently.

While cooking apples- mix maple syrup, sunflower butter, honey, cinnamon, lemon juice and drained and rinsed garbanzo beans

Mix it all together in a blender and blend until smooth.

 

4 sweet potatoes

1T olive oil per 4 slices of sweet potato (6 T)

 

2 large carrots spiralized

1c sunflower seeds

2c arugula

3 Apples

1 container Strawberries

 

2T maple syrup

2T olive oil

4t honey

1T Apple cider vinegar

1t lemon juice

 

Slice all of the sweet potatoes into ¼ inch slices

Cook the slices, turning often, in a skillet.  Cook until soft about 5 minutes each side

 

Spiralize the carrots

Slice apples and strawberries

Mix dressing in a mason jar: maple syrup, olive oil, honey, apple cider vinegar and lemon juice

Fold apples, strawberries, and arugula with dressing

Once cooked cover the toast with applesauce hummus.  

Add apples, strawberries, and arugula.

Top with carrots and sunflowers seeds
