Cauli-faux Mac 'n Cheese

Ingredients

3 pounds fresh cauliflower

2 Tablespoons olive oil

1 Tablespoon Turmeric

1 teaspoon Cumin

salt & pepper to taste

3 Tablespoons butter

¼ cup flour

Dash of pepper

1 ¾ cups milk

8 ounces Cabot extra sharp cheddar cheese, shredded

1 medium-sized bunch of fresh kale

Preparation Instructions

Cauli-faux Mac 'n Cheese

Preheat oven to 400 degrees (conventional oven); 350 degrees (convection oven). Spray cookie sheet & baking sheet with pan release. Chop cauliflower head into florets. Place cauliflower in bowl. Add olive oil, turmeric, cumin, salt & pepper and mix together. Place on cookie sheet & roast 20-30 minutes. Place cauliflower in baking dish. Mix in cheese sauce and bake another 20-30 minutes. Arrange kale chips on plate. Top with cauli-faux mac ‘n cheese. Sprinkle kale chip crumbles on top.

Cheese Sauce

Melt butter over medium heat. Stir in flour and cook 3 minutes to form a roux. Add dash of pepper. Slowly add milk, stirring with whisk until bubbly. Stir in cheese, a small amount at a time, until fully melted. 

Kale Chips

Wash kale. De-rib & tear into bite sized pieces. Place in a bowl & sprinkle with 2 Tablespoons olive oil and ¼ teaspoon salt. Mix well. Place on baking sheet. Bake for 5-10 minutes @ 400 degrees (conventional oven); 350 degrees (convection oven)
