Spicy Chipotle Black Bean Sliders with Apple Maple Salsa

2 cups Fresh, dried Black beans
1 ½ cups Refried beans
3 Eggs
1 ½ cup Red bell and green bell pepper, minced
¼ cup Cilantro, minced
2 tbsp. Scallions, minced
1 1/2 Garlic clove, minced
2 tsp Chipotle pepper
1 1/2 tsp Lemon juice
1 1/2 tsp Cumin
1 tsp Salt
½ cup Bread crumbs
Apple Maple Salsa:
4 tbsp. Butter
2/3 cup Onion, minced
4 Apples, peeled and chopped
4 tbsp Maple Syrup
½ cup White Grape Juice
2 cups Apple Cider
To taste Salt and pepper
3 Baguettes
8 oz. Cheddar Cheese
4 tbsp. Butter

Preparation Instructions
Directions:
Sliders:
Slightly mash black beans and refried beans and egg. Mix until smooth.
Stir in remaining ingredients and combine well.
Form burgers into 12 patties; set aside.
Heat a non-stick frying pan over medium-high. Coat with pan spray
Add burgers to the pan and cook for 3-4 minutes per side until warmed through and lightly browned. Set aside until ready to assemble sliders.
Salsa:
Melt 2 tbsp. of the butter in a frying pan. Add the onions and cook on medium heat until the onions are translucent and tender; about 5 minutes.
Add the apples and maple syrup and cook for about 5 more minutes. Remove from the pan and set aside.
Add the white grape juice to de-glaze pan. Cook until the juice is reduced by half. Add the apple juice and cook again until it has reduced by half. You should have about a ½ cup of liquid in the pan.
Add the apple mixture back into the pan and heat until apples are warm.
Take off heat. Add remaining 2 tablespoons of butter and let it melt into mixture.
Preparing Sliders:
Heat frying pan. Slice baguettes into thin slices. Butter both sides of baquette. Add cheese to one slice, then slider, then cheese. Heat until bread is toasted.
Assemble slider with salsa on top. Garnish and serve.
