Tasty, Sweet, Addictive Fried Rice

Ingredients

Ingredients:

3 Cups Long Grain Brown Rice

3 Cans of Water

2 Cans of Coconut Milk

1 Rounded Teaspoon Fresh Grated Ginger

1 Teaspoon Curry Powder

2 Teaspoons Shredded Sweet Coconut

½ of a Pineapple Chopped into Small Chunks

6 Tablespoons Vegetable Oil

2 Teaspoons Chopped Garlic

1 Small Onion

2 Eggs

1/2 Teaspoon Black Pepper

1 Carrot

1 Small Crown Broccoli

½ Red Bell Pepper Sliced into Very Thin Strips

1 Bunch of Cilantro Fresh Leaves Chopped

1 Lime Thinly Sliced for Garnish

¼ Cup Imitation Fish Sauce (Ingredients Below)

Ingredients to Make Imitation Fish Sauce

¼ Cup Pineapple Juice

¼ Cup Warm Water

1 Teaspoon Sugar

2 Tablespoons Gluten Free Soy Sauce

1 Tablespoon fresh lime juice

Mix Together

Preparation Instructions

Directions: 

Cook Rice in Coconut Milk, Water, Curry Powder, Shredded Coconut, and Grated Ginger 

Bring to Boil - Immediately Turn Down to Simmer, Cover Tightly, and Cook for about 25 – 30 Minutes (Rice Should be Slightly Undercooked) 

Remove from Heat, Drain in Colander Over Large Pot/Sink 

Dump onto Towel to Dry, Gently Pat Dry 

Slice Pineapple, Garlic, Onion, Red Pepper, Broccoli, Carrot, and Cilantro (put cilantro aside) 

Heat Vegetable Oil in Wok or Frying Pan Until Almost Smoking 

Add Garlic, Onion, and all Vegetables (not the cilantro) 

Stir for a Few Minutes 

Add Cooked Rice, Stir Together 

Push Rice and Vegetables to One Side of Pan 

Break Eggs into Pan - Do Not Touch for 1 - 2 Minutes (Let the Eggs Sit There) 

Mix Rice, Vegetables, and Egg Together 

Add Pineapple, Pepper, Cilantro, and Imitation Fish Sauce 

Mix All Together Well 

Garnish with Lime
