Crazy Carrot Crepes

Ingredients

2 eggs 

2 cmilk

4 c flour

1/4 c melted butter

salt

pepper

paprika

3 med carrots

4 med cloves of garlic

3 sweet potatoes

3 beets

1/2 pound cheddar cheese

Preparation Instructions

Mix eggs flour  and milk and cook into 6" crepes

Steam carrots with garlic  and then puree with salt, pepper, and melted butter

Peel and slice beets and sweet potatoes into thin match-sticks, fry until just crispy.

Spread crepes in a single layer on a baking sheet. On each crepe spread seasoned carrot puree then  sprinkle veggie sticks, shredded cheese and paprika. Place in oven for 10 min to melt cheese.
