Cheddar Apple Onion Lunch Muffin

Ingredients

2 cups corn flour or corn meal

2 cups boiling water

1 cup white flour

4 tsp baking powder

1 T sugar

¼ tsp salt

1 c milk

¼ cup melted butter

2 eggs

4 c chopped onions

2 c chopped apples

¼ c butter

½ pound sharp cheddar cheese

thyme

Preparation Instructions

Pour hot water over the corn meal.

In a separate bowl combine flour, baking powder, sugar and salt.

In another bowl whisk together: milk, melted butter, and eggs and add to the flour.

Stir in the cornmeal mixture.

Meanwhile chop onions and apples and sautee in butter until golden.

Place 1/3 cup batter in muffin cup, top with a chunk of cheddar, cover with apples and onions and thyme and bake for 25 min.
