Ultimate Breakfast Sandwich

Ingredients

Strawberry Jam                    Candied Orange Zest

2 cups Strawberries                1 Orange Peel

2 T Lemon Juice                    ¼ C Cupwater

1 ¼ Cup Sugar                    ¼Cup sugar

4 T Cornstarch                      1/4 C Maple Syrup

1 Orange

 

Waffle Batter 

4 ½  Cups Flour

4 T Baking powder

2 t salt

4 T sugar

4 eggs

4 cups Milk

1 cup Oil

1 T cinnamin

Homefries                        Bacon- 4pcs  per waffle

4 Potatoes (white)                    Eggs- 2each per waffle

   Vegetable Oil

2 T Salt

1 T Pepper

1T Paprika

¼ Red Onion

2/3 C Chopped  Red and Green Pepper

 

Fresh Parsley

Preparation Instructions

For Strawberry Jam-  In a medium saucepan heat berries, sugar, squeezed orange and lemon juice on a low heat, allow sugar to dissolve, once dissolved add muddle of cornstarch and water, bring to a simmer and allow to thicken to a rich consistency.  Keep warm for service

 

Candied orange zest-  bring water and sugar to a boil, allow to thicken to a syrup. thinly slice peel of orange , add to syrup and let cook til zest is tender, pour mix through a sieve allowing syrup to drain into your maple syrup...keep on warm surface til service time.

 

For Waffle Batter-  In a large bowl mix flour, baking powder , salt and sugar. In a separate bowl mix eggs, milk and oil. Combine both bowls of ingredients. Separate the batter evenly into two bowl, adding cinnamon to one of the bowls of batter.

 

For Homefries-  Wash and Cut Potatoes into bite size pieces, place in medium saucepan with cold water and bring to a boil, once al dente, drain and rinse with cold water.  While potatoes are blanching cut peppers and onions.  Heat oil in saute pan, add onions,, potatoes and seasoning and brown to an even color.  Once potatoes are brown add chopped peppers and heat til peppers are cooked al dente (2 minutes)

 

Set Waffle Irons to 3 setting allow to come to heat.  Add ladle of batter to oiled surface and allow to cook 5 minutes so crispy. Making sure that cinnamin

batter is used on one waffle iron and regular waffle  batter on other waffle iron.

 

Heat bacon slices .  Begin to cook eggs on low and slow heat.

 

Assemble sandwich with one walnut waffle, strawberry jam, eggs, bacon and second waffle.

 

Present on plate with homefries, garnish with orange and parsley and syrup drizzle.
