Tapenade Muffaletta Sandwich

Ingredients

1 1/3 cup black olives sliced

3/4 cup kalamata olives sliced

3/4 cup chopped pepperoncini (pickled peppers) drained

3/4 cup olive oil

24 oz. provolone cheese sliced

(3) 1 pound round bread loaves 

12 oz. chopped tomatoes

3/4 cup chopped greens

3 tsp. lemon zest

1 1/2 tsp. black pepper

 

Preparation Instructions

*For one sandwich begin by making the olive salad: 

In a large bowl, combine the black olives, kalamata olives, lemon zest, pepperoncini, tomatoes, black pepper, and olive oil. Mix together. 

Slice bread loaf horizontally.

Place 8 ounces of sliced cheese onto one half of bread. Using a spoon cover layer of cheese with the olive salad until cheese is not visible. Sprinkle 1/2 teaspoon of black pepper over olive salad layer. Add a sprinkled layer of 1/4 cup of greens on top evenly. Place other half of bread on top.
