Stir Fried Sesame Vegetables with Rice

Ingredients

4 cups vegetable broth

2 cups long grain white rice

2 tablespoons butter

2 tablespoons sesame seeds

1/3 cup peanut or vegetable oil

1 pound asparagus, trimmed and cut into 1 inch pieces

2 large onions sliced

1 1/2 cups mushrooms

1 cup sliced carrots

2 red peppers cut into 1 inch pieces

1 cup brocolli cut up 

2 teaspoons minced garlic

1/2 cup soy sauce

2 tablespoons sesame oil 

 

 

Preparation Instructions

 

Rice:

In a saucepan combine broth, rice and butter, cover and bring to a boil over high heat.  Reduce heat to low and simmer for 15 minutes or until all liquid is absorbed.

While rice cooks, place sesame seeds on a small baking sheet and bake in preheated oven for 5-6 minutes or until golden brown, set aside.

Vegetables: 

Heat oil in a large skillet over medium heat until very hot. Add asparagus, peppers, onion, mushrooms, garlic, carrots and broccoli. Stir-fry for 4-5 minutes until vegetables are tender but crisp. Stir in soy sauce and cook for 30 seconds remove from heat. Stir in sesame oil and toasted sesame seeds serve over  rice.
