Winter Vegetable Curry

Ingredients
3 tablespoon sesame oil
1/2 tsp. cumin
1/2 tsp. turmeric
1/2 tsp. chili garlic paste
1 2 inch ginger grated
2tsp. chopped garlic
4 small chilies
1 large onion
Salt & Pepper to taste
2 TBSP. tomato paste
2 cups butternut squash 1 inch cubes
1 cup parsnips one inch slices
4 red potatoes quartered
2 cups cauliflower
1 cup cooked chick peas save juice
3 cups of chick pea Liquid
1/2 cup Cilantro Diced
Apple Raita
Ingredients:
1 Cup of whole Yogurt
1 Apple peeled and grated
1/4 tsp chili garlic paste
dash of salt
1tsp. lemon juice
1/2 tsp. cumin
1/2 tsp chopped garlic
Naan Bread
Ingredients:
1/2 ounce of dry active yeast 1 cup warm water 110 degrees
1/4 cup sugar 3 TBSP. milk
1 egg Beaten 2 tsp. salt
4 1/2 cup King Author Flour 1/4 cup melted butter
Preparation Instructions
Curry
In Large skillet place sesame oil in pan over medium heat add onion and season with salt and pepper. cook 5 minutes add cumin, turmeric, chili garlic paste, ginger, chilies, cook five more minutes. Add tomato paste, and chick pea liquid and stir smooth. Add squash, parsnips, and potatoes cover and simmer 12 minutes. Add cauliflower and chick peas and gently incorporate. Cook five more minutes. When finished add cilantro and transfer to bowl and serving platter
Apple
Mix all ingredients in bowl check for seasoning and set aside.
Naan
In large bowl dissolve yeast in warm water and let stand 5 minutes, Stir in sugar, milk, egg, salt. mix well. Incorporate flour in 1/2 cup increments to make a soft dough (not to sticky or dry). Knead dough for 6 minutes on lightly floured board. Place dough in clean bowl and cover with towel. Let rise 40 minutes Punch Dough down and divide into golf ball size portions. and press out into round circles. Let rest 10 minutes. While dough is resting heat griddle to 350 degrees.
Lightly grease griddle and place bread on grill cook 2 to 3 minutes or until golden brown and puffy turn and cook 2 to 3 minutes or until done. Hold cooked Naan bread in warm dish covered with a cloth. Serve with Winter Curry and Apple Raita.
