Fantastic Fried Rice with Tantalizing Tempura

Ingredients

Fantastic Fried Rice

1 cup uncooked rice – (add water to cook rice in rice cooker)

3 tablespoons oil

½ onion

2 eggs

Assorted vegetables (celery, carrots, red cabbage), chopped

Seasonings:

2 tablespoons butter

3 tablespoons soy sauce

1 tablespoon garlic powder

¼ teaspoon white pepper

½ teaspoon sesame oil

Vegetable Tantalizing Tempura

1 cup all-pupose flour

1 egg

1 cup of cold water or seltzer

4-5 peeled sweet potatoes

ice cubes for chilling

 

Preparation Instructions

Fantastic Fried Rice

Add water to rice and cook in rice cooker. When rice is cooked, scoop onto a tray and loosen it up to let it cool down and dry a little.

Prepare vegetables and chop onion into smaller pieces.

Heat wok and add cooking oil. When wok is hot, place onion in and stir fry until fragrant. Add eggs to the wok, scramble and stir fry until dry.

Add vegetables and stir fry for a couple minutes, then add in rice. Loosen up rice and mix well with vegetables. Stir fry for a couple minutes before adding seasonings. Continue to stir fry until you see rice is “popping” in the wok.

Plate fried rice and garnish with spring onions and sesame seeds.

Vegetable Tantalizing Tempura

In a small bowl sift flour to remove clumps.

 In a separate bowl gently beat the egg until it is barely incorporated.

Add 1 cup of  ice cold water to the egg.

Add the flour to the egg & water mixture, do not overmix.

Batter thinly sliced sweet potatoes.  Once oil is slowly bubbling in the wok, place the battered sweet potatoes in the oil and cook them for two minutes on each side until golden.

Remove and drain, sprinkle with kosher salt.

Serve tempura with fried rice.
