Ingredients

  • 2 mushroom caps 
  • 1 med onion               
  • 1 med jicama             
  • 16 oz fig     
  • 1 clove garlic             
  • 3 T olive oil           
  • 2(28oz) tomato sauce         
  • 1(6oz) tomato paste            
  • 1/2 small onion(sauteed)       
  • 2 cloves garlic                     
  • 1 tsp. onion salt                   
  • salt & pepper(to taste)           
  • 2 med eggplant
  • 3 cups flour
  • 4 eggs(scrambled)
  • 3 cups italian panko
  • 16 oz parmesan cheese(shredded)           
  • 4 cups oil(for frying) 
  • 16 oz campanella                      

 

Preparation Instructions

STIR FRY 1:saute' mushrooms,onion,figs,garlic,jicama in 3 tablespoons olive oil till tender

SAUCE 1:heat on low heat adding sauted onion&garlic salt&pepper to taste

MAIN 1:heat oil 2:cut eggplant into thin strips dredge eggplant into flour then eggs then panko crumbs fry set on sheet pan with paper towel add cheese
