Ingredients
- 2 mushroom caps
- 1 med onion
- 1 med jicama
- 16 oz fig
- 1 clove garlic
- 3 T olive oil
- 2(28oz) tomato sauce
- 1(6oz) tomato paste
- 1/2 small onion(sauteed)
- 2 cloves garlic
- 1 tsp. onion salt
- salt & pepper(to taste)
- 2 med eggplant
- 3 cups flour
- 4 eggs(scrambled)
- 3 cups italian panko
- 16 oz parmesan cheese(shredded)
- 4 cups oil(for frying)
- 16 oz campanella
Preparation Instructions
STIR FRY 1:saute' mushrooms,onion,figs,garlic,jicama in 3 tablespoons olive oil till tender
SAUCE 1:heat on low heat adding sauted onion&garlic salt&pepper to taste
MAIN 1:heat oil 2:cut eggplant into thin strips dredge eggplant into flour then eggs then panko crumbs fry set on sheet pan with paper towel add cheese
