Hot Pot Noodles

Ingredients

2 pkg vegetable broth (64oz)

½ cup soy sauce

10 oz udon noodles

1 inch knob fresh ginger

5 tbsp hot sauce

3 tbsp sesame oil

¼ yellow onion

1 cup crimini mushrooms

4 king oyster mushrooms

3 scallions

2 baby bok choy

1 pkg pea shoots

1 lg head broccoli

3 small cloves of garlic

 

Preparation Instructions

Mince garlic, onions, ginger and quarter cup of crimini mushrooms. Combine with sesame oil in pot and sautée until browning and aromatic.

Add broth, hot sauce and soy sauce

bring to a boil and add noodles

Add broccoli and quarter cup of chopped crimini and oyster mushrooms

Boil noodles for 15 mins, adding chopped crimini mushrooms throughout

Add baby bok choy 5 mins before timer is done for pasta

Serve, garnish with pea shoots, thinly sliced mushrooms and scallions
