2 tablespoons olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
2 (28-ounce) cans whole tomatoes, drained, tomatoes chopped
3 tablespoons tomato paste
1 teaspoon dried oregano
1 bay leaf
Salt and pepper

30 cabbage leaves
1 ½ c cooked brown rice
1 c cooked red lentils
1 large carrot, grated
1 large onion, finely chopped
3 ripe medium tomatoes, finely chopped
¼ c parsley, finely chopped
1 T salt
1 T cumin
1 t chili powder
1 T olive oil
½ c- 1 c water
Preparation Instructions
Tomato Sauce Directions:
In a large pot, heat the oil over medium heat. Add the onion and cook, stirring occasionally, until soft, about 5 minutes. Add the garlic and cook for 2 minutes longer. Add the remaining ingredients and cook, uncovered, stirring occasionally, until thickened, about 30 minutes. Season with salt and pepper, to taste.

Stuffed Cabbage Rolls Directions:
Make the stuffing: Sauté onions for 2 minutes, add carrots, tomatoes and parsley to sauté 3 additional minutes. Remove from heat. Add salt, cumin, chili powder and olive oil
Prepare cabbage leaves. Remove cabbage leaves from head. Bring a large pot of water to boil, and immerse 4-5 cabbage leaves. When leaves turn bright green remove softened leaves. Place in chilled water (blanch). Return water to boil and repeat until all cabbage leaves have been cooked.
Prepare cabbage rolls:
If making large cabbage rolls, use the whole leaf. Place a heaping tablespoon f filling 1 inch from the thick end of the cabbage leaf. Fold the bottom over the filling, fold the sides in, and roll up.
Cook cabbage rolls:
Line the bottom of a large pot with any torn or unused leaves and drizzle with 1 T of olive oil. Place rolls closely together, seam side down in the pot in 2-3 layers as needed. Bring to a medium heat to heat cabbage rolls.
Serve cabbage rolls topped with tomato sauce or barbecue sauce.
