Fruit Crepes with Strawberry Puree

Ingredients

fruit salsa                            

strawberries - 3 cups                    

blueberries - 1 cup                        

red delicious apple - 3                    

kiwi - 1    

mango - 1

cinnamon - 1 TB

lemon - zest from 1 and juice from 1 lemon    

sugar - 1 TB                            

brown sugar - 1 teas    

                    

crepes                            

eggs - 4                

milk - 2 cups                            

butter, melted - 4 TB                    

whole wheat flour - 1 cup  

all purpose flour - 1/2 cup             

baking powder - 2 teas

cinnamon - ½ tsp

fresh ginger - 1 TB

 

strawberry puree

strawberries - 1 cup

 

Preparation Instructions

Directions
Cut all fruit into bite size pieces and place into a large bowl. Mix with cinnamon, lemon juice, zest, and sugars. Mix well.

Directions
1. Heat a nonstick skillet over medium heat.
2. In a medium sized bowl crack eggs into bowl and whisk. 
3. Add 2 cups milk and whisk till blended. 
4. Melt the butter and add to the eggs and milk and whisk till blended. 
5. Set aside.
6. In a separate medium sized bowl mix 1 cup whole wheat flour, ½ cup white all-purpose flour, and 2 teaspoons of baking powder. 
7. Add the flour mixture to the liquid mixture and stir until blended.
8. Cover the bottom of hot skillet with batter.
9. Cook for about 2 minutes and then flip.
10. Cook other side for about 2 minutes.
11. Fill with fruit salsa.

Strawberry Drizzle/Puree 
Blend in food processor till pureed.

Fill crepe with fruit salsa and drizzle with strawberry puree.
