Hash Brown Omlet for Breakfast at School !

Ingredients

Omlet: 18 Duck Eggs, 3oz. Cheddar Cheese, dash of Creme

Hash Browns: 1 large Sweet Potatoes, 3 medium Blue Potatoes, .5 Beet, 1 Carrot, 5 Scallion, 3 duck eggs, on Veggie "Sausage" locally baught patties, and add maple sugar & seasonings.

Topping: Tomato Apple Chutney from school store, Sour Creme.

Using also: Butter, Oil to cook with, Herbs, Salt & Pepper to Taste

Preparation Instructions

Omlet:  Beat eggs with cheese and creme, then heat on skillet until done.  3 eggs per omlette.

Hash Brown:  Shred vegetebles and combine with eggs chopped scalions and shape into hash brown patties.  Fry patties on a hot skillet with oil and butter.  Form Veggie Sausage into pattie shape matching the hash brown and cook on skillet. 

Plating: Place hash brown on top Veggie Sausage and roll up in Omlet on the plate.  Add topping, and you have a hash brown omlet for breakfast at school!
