Vegetarian Lo Mein

Ingredients
1 pound udon or linguine fini noodles
2 tablespoons soy sauce
1 teaspoon sesame oil
1 teaspoon sugar
1 teaspoon grated fresh ginger
¼ teaspoon Sriracha chili sauce
1 tablespoon oil
2 tablespoons minced garlic
1 cup sliced mushrooms
½ cup chopped scallions
½ cup julienned red pepper
½ cup julienned orange or yellow pepper
½ cup julienned carrots
1 cup trimmed snow peas
8 ounces baby spinach
1 cup chopped cilantro
Preparation Instructions
Boil water in large pot for noodles. Cook noodles until al dente, drain and rinse in cold water. Set aside.
In a small bowl combine soy sauce, sesame oil, sugar, ginger and Sriracha sauce.
Heat oil in wok or large sauté pan over high heat and add garlic, mushrooms, and scallions. Stir-fry for 30 seconds then add peppers and carrots. Next add the snow peas and spinach and cook until the greens are just wilted. Add drained noodles. Pour sauce over the noodles and stir-fry until the sauce is evenly distributed. Serve noodles and garnish with chopped cilantro.
