Ingredients

For Mac & Cheese
3.5 qt of water
8 oz elbow macaroni
4 T oil (2 T for sauteed onions; 2 T for macaroni)
1/2 medium onion, chopped
1 T flour
2 1/4 c milk
2 c Cheddar
2 T butter
1 c chopped cauliflower
1 c chopped brocolli
1 1/2 c Panko bread crumbs
1 T garlic powder
Dash of salt
Dash of pepper
For Pesto Sauce
4 oz pesto
1/4 c milk
1 dash flour
1/4 c cheddar cheese
 

Preparation Instructions

Preheat oven to 350 degrees.
Boil water and 2 T oil.  Once boiling, add elbow macaroni.  Cook till tender (8-10 min), stirring occassionally.  Drain when ready.
Put 2 T oil into frying pan on medium heat.  When hot, add chopped onion.  Saute until onion softens and has a clear appearance.  Add a dash of salt and pepper, 1 T flour and milk.  Heat.  Then add 2 c cheddar cheese.  When cheese melts sauce is ready.   
Combine cheese sauce, chopped brocolli, cauliflower and elbow macroni.
Combine Panko bread crumbs, garlic powder and 2T butter.  Use the bread crumb mixture to line the bottom of an 8 x 8 in. baking pan.  Pour macaroni and cheese mixture on top of bread crumbs.  Bake for 20 minutes.
Prepare Pesto sauce by combining ingredients into a small saucepan.  Bring to low boil to melt the cheese, remove from heat.
Remove macaroni and cheese from oven.  Let cool 5 minutes.  Invert pan onto a dish.  Let stand 1-2 minutes, then remove pan.  Pour pesto sauce on top of bread crumb crust.
