Bean Burrito with Chocolate

Ingredients

3/4 C cooked kidney beans

3/4 C cooked black beans

2 T butter

1 clove garlic, minced

1/2 t cumin

.5 oz baker's unsweetened chocolate

1/4 C onion, diced

2 T butter

4 - 2.5 oz flour tortillas

3/4 C fresh spinach

1/2 C tomatoes, diced

3 T green pepper, diced

1 medium avocado

1/2 C shredded cheddar cheese

 

 

Preparation Instructions

Saute onions in butter over med heat.

When onions begin to clear, add chocolate and allow to melt. add cumin and minced garlic.

Add beans and smash them. Add water to thin, if needed.

In separate bowl, mix tomatoes, onion, cilantro and peppers for salsa.

On a tortilla, layer beans, cheese, spinach, and avocado.  Roll into burrito.

Spoon salsa over the top.  Serve
