Double Decker Tortilla Pie with Salsa
Ingredients
Ingredients for Tortilla Pie
½ c portobello mushrooms, chopped
3 tbsp olive oil
2 tbsp onion, minced
1 to 2 cloves garlic, minced
1 c. grated carrot
1 c. grated squash
1 c. grated parsnips
1 tsp cumin
1 tsp chili powder
2 pinches cayenne pepper
½ tsp salt
¼ tsp black pepper
1 can black beans, drained and rinsed
1 c or more enchilada sauce
½ c chopped cilantro
4 c grated Monterey Jack Cheese, divided, 2 c. per pie, 1 c. per layer
4 10 " tortillas of your choice
Ingredients for Salsa
2 medium tomatoes, seeded and diced
1 medium tomato, left whole, chopped
⅓ c chopped onion
1 clove garlic, minced
⅓ c. chopped jalapeno
1 ½ avocados, peeled cored and diced
1 tbsp plus 1 tsp. olive oil
1 tbsp lime juice
¼ tsp. chili powder
¼ tsp. cumin
4 pinches salt
2 pinches pepper
¼ c cilantro, chopped

Preparation Instructions for Tortilla Pie
____1. Prepare the veggies:
- chop mushrooms
- chop onion
- mince garlic
- peel and grate carrots, parsnips, and squash
____2. Place the olive oil in a large fry pan and heat it on #5 using the stove top.
When oil is hot, add mushrooms and saute about 3 minutes.
____3. Add the chopped onion to mushrooms and saute.
____4. Add the garlic to the onion. Saute for about 1 minute, DON’T BURN THE GARLIC.
____5. Add the grated veggies and stir well. Add 1 tsp. water. Place a lid on the fry pan and gently cook veggies.
____6. Add the cumin, chili powder, cayenne and salt/pepper to veggie. Coat veggies with spices and cook for 1 minute.
____7. Add the drained beans and enchilada sauce to fry pan. Stir well and cook for a few minutes. You may need more sauce.
____8. Chop cilantro and add to fry pan.
____9. Spray 2 10 " spring form pans with Pam. Be sure to spray sides too.
____10. Gently toast 2 tortillas to crisp them using a fry pan. These are the bottom layers for the pans.
____10. Begin to layer the Pies in the pans:
- place #1 crisped tortilla in pan
- place ½ filling on top of tortilla
- place about 1 c. cheese on top of filling
- NEXT, place #2 tortilla on top of cheese
- Add some enchilada sauce and 1 c. cheese on top of tortilla #3. Spread sauce to edge of tortilla so it does not burn.
____11. Place tortillas in 350 degree oven for about 13 minutes.
____12. When done, let the tortilla rest for about 5 minutes before cutting.
____13. Garnish with salsa.
Preparation Instructions for Salsa
____1. Using a cutting board, chop the tomatoes. Place in medium bowl.
____2. Chop the onion, garlic, and jalapenos. Add to the tomatoes.
____3. Prepare avocado and add to vegetables in bowl.
____4. In a small bowl, measure the following and mix with a fork or whisk until well blended:
- olive oil
- lime juice
- chili powder
- cumin
- salt and pepper
____5. Add the olive oil mixture to the vegetables and gently mix with a rubber scraper. Don’t smash the veggies!
____6. Chop the cilantro and add to the salsa mixing gently.
____7. Serve on a kale leaf.
