Ingredients

10 cups stir fry noodles, 6 cups carrots(matchsticks), 6 cups summer squash(matchsticks), 3 cups jicama(matchsticks), 2 1/2 cups snow peas, 4 med tomatoes, 2 cups green onions, 2 cups fresh spinach, 1/2 teas.ginger,2tbls.cilantro, 3cloves garlic,1/2 cup pineapple, 3/4 soy sauce salt&pepper to taste3/4 cups sesame oil, 4 eggs

Preparation Instructions

1:heat sesame oil in large skillet med. heat stir in garlic carrot for about 5 min.add summer squash, ooking add whole jicama, giner, snow peas, tomatoes, green onoins&scrammble eggs

2:the last 5 mins.of cooking add whole spinach set mixtuer aside

3. cook noodles as directed, drain add soy sauce & pineapple juice

4. plate noodles in a nest topping it with the vegetable mixture

5. sprinkle with fresh cilantro
