Veggie Pizza Rolls

Ingredients
1 package of mozzarella cheese, diced
½ yellow onion, chopped
½ green bell pepper, chopped
½ yellow bell pepper, chopped
½ red bell pepper, chopped
1 tbsp. butter
½ tsp. garlic powder
½ tsp. dried italian seasoning
6 morning star veggie patties
For Flatbread:
¾ cup mashed potatoes
1 T plus ½ teaspoons yeast
1 T plus 1 ½ teaspoons honey
1 ½ tsp salt
1 cup plus 2 tablespoons potato water, lukewarm
4 cups of flour
3 T olive oil
For Marinara:
1 (14.5 ounce) can tomatoes, undrained
1.5 ounces tomato paste
¼ cup chopped onion
2 garlic cloves, finely chopped
1 tablespoon olive oil
¾ t sugar
½ t dried basil leaves
¼ t dried oregano leaves
¼ t pepper
dash salt
Preparation Instructions
For Flatbread:
Instructions:
Peel one large potato, cut into small pieces, place in salted water in saucepan and boil until very tender.
Pour water into a measuring cup to cool to lukewarm.
Mash potatoes and place in large bowl. Add yeast, honey, salt and lukewarm water. Mix.
Once yeast has started to activate, add oil.
Add 2½ cups flour. Stir really well with a wooden spoon. If it is still sticky, stir in more flour. Sprinkle flour on a dry cutting board and knead dough. Keep kneading in flour until the dough is no longer sticky and is stretchy and smooth.
For Marinara;
Instructions:
In a saucepan, stir all ingredients until well mixed.
Heat to boiling; reduce heat to low. Cover and simmer 30 minutes to blend flavors
Instructions to put it all together!:
Preheat oven to 350 degrees F.
Lightly flour surface so dough won’t stick and roll out into a rectangle. Cut out 24 circles and place a teaspoon of cheese, peppers, onions, and sausage in each dough circle.
Carefully take the edges and squeeze them together so it forms a ball.
Place balls in a sprayed pie pan and set aside.
In a small bowl, whisk together melted butter, garlic powder and italian seasonings. Brush mixture over the balls until coated and bake in oven for 15 to 18 minutes or until the tops are golden brown.
Serve with marinara sauce.
