Really? It's Not Meat? Tacos

Ingredients

¼  cup orange juice

½  cup lime juice

½ cup soy sauce

¼ cup chopped garlic

¼  teaspoons sriracha

2 teaspoons dry oregano

¼  cup olive oil

1 cup shredded red cabbage

1 cup shredded green cabbage

1 green apples julienned

½ cup mayo

2 teaspoons honey

2 teaspoons lime juice

2 teaspoons cider vinegar

Dash of salt

1 cup mayo

¼ cup sweet chili sauce

¼  cup sriracha

2 teaspoons lime juice

½ cup cider vinegar

2 tablespoons sugar

2 teaspoons salt

1 red onion sliced in rounds

Beyond meat

Taco size corn tortillas

queso fresco

fresh cilantro

fresh lime

radish

Preparation Instructions

Beyond Asada

¼  cup orange juice

½  cup lime juice

½ cup soy sauce

¼ cup chopped garlic

¼  teaspoons sriracha

2 teaspoons dry oregano

¼  cup olive oil

Whisk together all ingredients in a bowl and let sit.

Green Apple Slaw

1 cup shredded red cabbage

1 cup shredded green cabbage

1 green apples julienned

½ cup mayo

2 teaspoons honey

2 teaspoons lime juice

2 teaspoons cider vinegar

Dash of salt

In a bowl combine the first 3 ingredients, then in a separate bowl whisk together the remaining ingredients.  Add the wet dressing to the apple and cabbage mix until desired taste and consistency.

Bang Bang Sauce

1 cup mayo

¼ cup sweet chili sauce

¼  cup sriracha

2 teaspoons lime juice

Pickled Red Onions

½ cup cider vinegar

2 tablespoons sugar

2 teaspoons salt

1 red onion sliced in rounds

Beyond Meat

Brown the beyond meat in a saute pan. Add the carne asada marinade and let simmer.

Tortillas

Wrap 4 stacks of five tortillas in a packet of foil. Put in a pre-heated 350 degree oven for 10 minutes.

Assembly

Plate taco shell. Top with beyond meat, green apple slaw, shredded queso fresco, bang bang sauce, fresh cilantro, fresh lime, radish, and red onions.
