Amazing Egg Rolls

Ingredients

Egg Roll Wrappers:

  • 3 eggs
  • 2 ¼ cups cold water
  • ¼ teas of salt
  • 2 ⅔ cup flour
  • 8 tablespoons veg. Oil

Egg Roll Filling:

  • 1 cup thin sliced mushrooms
  • 4 cups shredded green cabbage
  • 3 cups shredded red cabbage
  • 1 cup thinly sliced onions
  • 1 cup bean sprouts
  • ½ cup of shredded carrots
  • 1 tablespoon fresh grated ginger
  • 2 tablespoon fresh minced garlic
  • ½ cup roughly chopped cilantro
  • 2 tablespoons chili garlic sauce
  • 3 tablespoons of low-sodium soy sauce
  • 2 tablespoons of veg. Oil

Spicy Sweet & Sour Sauce

  • cup sugar
  • 1/3 cup ketchup
  • ⅔ cup distilled white vinegar
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon garlic powder
  • ½ tablespoon crushed red pepper flakes

 

 

 

Preparation Instructions

Egg Roll Wrappers:

  1. Whisk eggs, cold water and salt together.
  2. Mix flour in ⅓ at a time slowly while mixing.
  3. Once all flour is mixed in completely let rest for 15 mins
  4. Heat pan on high, add tablespoon of veg. oil , pour ⅓ cup of mixture in a pan and cook on low for 1 min until the bottom is golden.
  5. Take the egg wrapper out of the pan and rest on a paper towel.
  6. Repeat steps 5 & 6 until the mixture is gone.

Egg Roll Filling:

  1. Preheat oven to 425
  2. Shred cabbage, peel & shred carrots
  3. Slice mushrooms, mince garlic, grate ginger, roughly chop cilantro
  4. Mix cabbage, onions, bean sprouts, carrots, ginger, garlic, chili garlic sauce in bowl
  5. Add one tablespoon of veg oil to the pan heat pan. Once the pan is hot add mushrooms over medium heat and stir until about three minutes until they get soft. 
  6. Next add 1 tablespoon of veg oil and the cabbage mixture to the pan of mushrooms. Cook over medium/ low heat until cabbage mixture reduces down, about four minutes. Stir in the low sodium soy sauce and turn off the heat. 
  7. Let the mixture cool down. 
  8. Spray baking sheet or line with parchment paper
  9. Once the mixture is cooled down put ¼ cup of mixture in egg roll wrapper, roll up and place on sheet pan fold side down.
  10. Once all egg rolls are made, place in oven and bake for 18 min
  11. Serve with side of spicy Sweet & sour sauce

Spicy Sweet & Sour Sauce:

  1. Mix all ingredients in small bowl
  2. Portion out for egg rolls
