Veggie In and Out Burger

Ingredients

1 pound can black beans, drained and rinsed

½ cup chopped onions

1 garlic clove, minced

1 cup chopped mushrooms

1 cup corn

2 t plus 2 T oil for frying

1 T worcestershire sauce

1 T balsamic vinegar

1 T soy sauce

1 t paprika

1 t cumin

2 t black pepper

½ t salt

½ cup bread crumbs

½ cup oatmeal

½ cup cooked white rice

2 avocados

Hot sauce

salt

Cheddar Cheese

Radish sprouts

Tomato

Lettuce

Red onion

Won ton wrappers

 

Preparation Instructions

Heat 2 t oil in a pan over medium heat.  Fry the onion, veggies and garlic until softened, about 5 minutes.

 

Transfer to a food processor and pulse with beans and all flavorings.  Pulse until combined but still chunky. Pulse in the bread crumbs, oatmeal and white rice.

 

Form into balls and flatten into patties.

 

Heat 2 T oil over medium high heat.  Fry 2-3 minutes per side until browned and heated through.  Top with cheese and allow cheese to melt.

 

Sauce:  mash the avocados.  Add 4 T hot sauce and ¼ t salt.

 

Fry 2 won ton wrappers for each burger.

 

To assemble the burger. Place 1 slice tomato on the wrapper.  Place burger on top. Add avocado sauce, sliced onion and sprouts.  Top with second wrapper.
