VT Garden Minestrone

1 onion
1 small bunch spinach
2 med carrots
2 stalks celery
1 small zucchini
1 lg clove of garlic
1 T butter
2T parsley, floated and chopped
Pinch each of basil, marjoram, oregano, salt and pepper
2 qt veg broth
1/4 cup tomato paste
1/3c red kidney beans drained
1/3 c pasta
1/2 red pepper
1 small wedge parm to grate

Preparation Instructions

Medium dice all vegetables.

Mince garlic.

Saute onion, celery, garlic, red pepper, herbs and carrots in butter. 

Add vegetable broth and tomato paste. 

Bring to boil, add drained beans and spices.

Simmer until done. Adjust seasonings.  Serve wth fresh grated parmesean
