3-20 Ounce cans of Jackfruit
4 Tablespoons of olive oil
6-8 Ounce bags of Cabot 4 Cheese Mexican Shredded Cheese
4 Cloves garlic minced
3 Red peppers thinly sliced
3 Yellow peppers thinly sliced
3 Tablespoons black pepper
2 Tablespoons oregano
4 packages ready made flatbread
Drain, and blot dry jackfruit pieces.
Heat oil in pan over medium heat.
Cook jackfruit over medium heat for 20-25 minutes, turning over until cooked down.
Add garlic, oregano and black pepper after jackfruit has cooked for about 15 minutes.
Break apart/pull apart pieces with wooden spoon.
Cover shredded jackfruit and set aside.
Evenly spread cheese on flatbread.
Evenly spread red and yellow peppers on flatbread.
Evenly spread jackfruit on flatbread.
Place flatbread in oven and bake for 30 minutes or until golden brown.
Slice flatbread into individual pieces for serving.
