Sweet Potato Carrot Slaw Muffins

Ingredients

8 c oats

3 t cinnamon

4 ⅔ c milk

1 t salt

1 c cranberries

2 c mashed sweet potato

½ c brown sugar

4t orange juice

⅔ c maple syrup

½  t nutmeg

½ t ginger

½ t cloves

2 T chia seeds

2 t baking powder

4 large carrots

Muffin papers

Cooking spray

1½ c shredded carrots

2c apples cut into small pieces

1c cranberries

¼ c mayonnaise

3T yogurt

3T rice vinegar

3T honey

 

½ t celery seed

Preparation Instructions

Sweet Potato:

Peel and cut sweet potato.

Boil in hot water for 10-12 minutes

Drain and mash.

Set aside to cool

 

Muffin:

Mix oats, cinnamon, milk, salt and cranberries and set aside.

In a second bowl mix together mashed sweet potato, brown sugar, orange juice and maple syrup.

Add nutmeg, cloves, chia seeds and baking powder

Grate carrots and add ½ grated carrots ot muffin mix

Spray muffin tin, add liners and spray liners

Use a 1/4 c scoop to add batter to muffin tin

Bake 30 minutes at 350 ℉

Scoop out hole in middle of the muffin and add the slaw

 

Slaw:

1½ c shredded carrots

2c apples cut into small pieces

1c cranberries

¼ c mayonnaise

3T yogurt

3T rice vinegar

3T honey

2T orange juice

½ t celery seed

Peel and shred the carrots

Chop the apples

Combine all ingredients
