cauliflower pizza crust with pesto and tomato sauce

Recipe for crust                                            

6 cups cauliflower (about 3 heads or 2 large heads cauliflower)

2 whisked eggs                                                                        

½  teaspoon dried oregano                                        

½  teaspoon salt          

½  minced onion

6 SMALL cloves of garlic, minced

1 cup parmesan

½ mozzarella

½ cup of parmesan


½ cup parmesan for top

2 cups mozzarella for topping

2 cups baby spinach


Recipe for red sauce -Jemma

2 tbsp. tomato paste

2 cups crushed tomato

2 tsp. basil leaves

1 tsp. dried oregano

2 clove of garlic minced

¼ of an onion

1 tsp sugar


Recipe for pesto

2 cups basil

3 cloves garlic

¼ cup extra virgin olive oil, divided

Salt and pepper to taste

½ cup parmesan

Preparation Instructions

Peheat oven to 350

1. Get food processor set up and plugged in and line 4 baking trays with parchment paper and preheat oven (375)-Estelle

2. Shred cauliflower in food processor- Isabelle

3. Dry cauliflower with paper towels-Isabelle

4. Spread out evenly on pan with parchment-Isabelle +Estelle

5. Bake for 10 mins-Isabelle

6. Squeeze again-Isabelle+Estelle. Mix together rest of ingredients, (whisked egg, dried oregano, salt, garlic, parmesan and mozzarella)-Estelle

7. Shred parm and mozzarella-jemma

8.Add to cauliflower and mix thoroughly-Estelle

9. Make cauliflower mixture into neat, circular patties 16 little and 2 big-Estelle and Isabelle

10. Chop 3 cloves garlic-Jemma

11. Turn pan on, heat up and then add 2 T olive oil and garlic to saute-Jemma

12. Saute baby spinach with garlic and oil for 4 minutes-Jemma

13. Bake crust for 30-40 minutes-Estelle

14. Spread pesto-Estelle

15. Spread tomato sauce,  shred parmesan + mozzarella-Jemma


Instructions for topping crust

1.Spread tomato sauce and pesto on the crusts-Jemma

2. Spread spinach on top-emma

2. Sprinkle cheese on the crusts-Emma

3. Put crust in over long enough to melt cheese, STAY BY OVEN and watch-Jemma

Instructions for tomato sauce

Put all ingredients in pan and simmer on medium heat for 45 mins


Instructions for pesto

Combine the basil and garlic in a food processor until coarsely chopped.

Add some of olive oil and blend Until fully incorporated, season with salt and pepper.

Add the rest of the olive oil and pulse until smooth

Mix in the cheese
