Ricotta Gnocchi with Zucchini Meatballs and Pesto

Ricotta Gnocchi with zucchini meatballs and garden sauce


Gnocchi recipe

6 cups ricotta

3 tsp salt

6 eggs

1 ½ cups of cheddar

1 tsp pepper

¾ tsp nutmeg

6 cups flour

Zucchini Meatball Recipe

3 medium zucchini

Kosher salt to taste

2 cloves garlic, minced

¼ C thinly sliced basil

1 egg lightly beaten

1 C. panko bread crumbs

¼ cup grated Parmesan

Black pepper

2 tbsp olive oil


Recipe for pesto

2 cups basil

5 cloves garlic

½ cup extra virgin olive oil, divided

Salt and pepper to taste

½ cup parmesan

Ricotta Gnocchi with zucchini meatballs and garden sauce


Mix everything but flour

Put flour on table, make well

Add wet ingredients to flour well

Slowly incorporate it together, careful not to over mix

Take a knife, divide dough into ⅛s

Roll out into ¾ inch diameter snakes and cut into small, even pillows

Place on sheet WITH parchment paper

To cook

Boil water with salt, make sure really boiling

Boil fresh pasta for 3-4 minutes or until it rises to the surface

Make sure it is tender but firm


Grate zucchini (medium grater)

Line bowl with towel, add zucchini and squeeze out water

Transfer zucchini to clean bowl. Add garlic, basil, egg, breadcrumbs, and parmesan. Season with salt and pepper

Form zucchini into balls

Meanwhile, heat olive oil in large skillet over medium heat. Add meatballs and and fry on all sides until golden brown

Drain meatballs on plate lined with paper towels


Order of Cooking/preparation

All- set out station

Peter- cut up garlic for zucchini meatballs and sauce

Hannah- grate cheddar and zucchini

Eliza- measure flour, ricotta, salt, parmesan, spices


Peter- boil water (remember to add salt)

Hannah- measure seasoning, breadcrumbs, parmesan, and other stuff for zucchini meatballs. Squeeze zucchini

Eliza- make gnocchi dough


Peter- add other ingredients and form meatballs

Hannah, Eliza- cut and roll gnocchi dough


Hannah- cook meatballs

Peter- make pesto

Eliza- start dishing out gnocchi


All- finish up other jobs and begin work on presentation
