Beet Hummus

This hummus recipe is a key component of Rainbow Rocket Wraps, a featured school-friendly entree shared during our summer 2021 On-Farm Local Food Celebration & Movement Building Workshop series held all throughout Vermont. Read more about the series here.

Makes sixteen ¼ cup servings.

Ingredients

  • 10 oz beets, cooked, boiled, and drained
  • 1 lb + 14 oz canned white beans 
  • 2 tablespoons raw garlic
  • 2 tablespoons lemon juice
  • ¼ cup tahini
  • 2 tablespoons olive oil
  • 1 teaspoon salt

Directions

  1. Drain and rinse all beans.
  2. Add all ingredients to a food processor or blender and puree until smooth.
