The Mañana Burrito

Ingredients

5 large flour tortillas

1lb of red potatoes, diced

1 medium onion, diced

1 small tomato, diced

1 medium green pepper, diced

5 eggs, scrambled (Beidler Family Farm, Randolph Center, VT) 

1 cup, grated Green Onion Cheddar Cheese (Neighborly Farms, Randolph Center, VT)

2 tablespoons of butter

½ cup of plain yogurt

1 mandarin orange, peeled & diced (can use pineapple as a substitute)

½ mango, peeled & diced

1 tablespoon, cilantro

1 teaspoon of VT maple syrup

1 teaspoon of cumin

1 teaspoon of coriander

1 teaspoon of chili powder

salt & black pepper to taste

Preparation Instructions

1. Dice potatoes, onion and green pepper. Heat half of the butter in large skillet and add diced potatoes, cook for 10mins on medium heat- stirring occasionally to prevent sticking or burning. Add half of the diced onion and half of the diced green pepper.  Add cumin, coriander, chili powder, salt & black pepper.  Continue to cook on medium heat- occasionally stirring to prevent sticking and burning until potatoes and onions are soft and browned.  Turn off heat, cover and leave in skillet.   

 

2. Scramble eggs in bowl, heat remaining butter in a large skillet, add eggs and cook on medium-low heat, stirring to prevent burning.  Cook until eggs are fluffy and fully cooked. Turn heat off, add grated cheese on top of eggs and cover with a tight fitting lid. Leave covered in skillet.

 

3. Mix remaining onion, green pepper, tomato, orange, mango, cilantro, yogurt and maple syrup in a bowl and set aside.

 

4. Add potato, onion & pepper mixture to skillet with eggs & cheese.

 

5. Use the empty warm skillet to quickly heat tortillas. Once warm, fill each tortilla halfway with an evenly distributed mixture of potatoes, eggs & cheese. Fold tortillas into burritos and top with yogurt “breakfast salsa”.   

 

6. Eat with a fork & knife, if you like it spicy add your favorite hot sauce.

 

7. Enjoy with a dark roast coffee or fresh squeezed Orange juice!
