Veggie Wonton quiches

Ingredients

48 wonton wrappers 

2 cups finely chopped brocolli

1 cup diced red peppers

1/2 cup finely chopped onion

4 teaspoons vegetable oil

6 eggs

2 tablespoons water

4 teaspoons dried parsley flakes

1/2 teaspoon salt

1/2 teaspoons dried thyme

1/2 teaspoon white pepper

dash Cayenee pepper

1 1/2 cups shredded cheddar cheese 

 

 

Preparation Instructions

1) Gently press wonton wrappers into a muffin pan coated with nonstick cooking spray. lightly coat wontons with nonstick spray. bake at 350 for 5 minutes. Remove wonton wrappers from cups and place upside down on baking sheets. lightly coat with nonstick spray and bake 5 minutes longer or until golden brown.

2) meanwhile, in a nonstick skillet, cook the brocolli, pepper and onion in oil over medium heat for 4-5 minutes or until crisp-tender. In a bowl, whisk the eggs and water, stir in the parslet,salt,thyme,pepper and cayenne. Add to vegetable mixture; cook over medium heat for 4-5 minutes or until eggs are completly set.

3) Remove from heat; stir in cheese. spoon filling into each wonton cup. bake for 5 minutes or until filling is heated through. serve warm 

***fill wonton wrappers a few at a time, keeping the others covered with a damp towel until ready to use
