Veggie Dumpling Delight

Ingredients

Dumpling recipe:

3 and 1/4 tablespoons Vegetable Oil

1 tablespoon minced ginger

1 large onion, chopped

2 cups shitake mushrooms, chopped

1.5 cups green cabbage, finely shredded

1.5 cups carrots, finely shredded

1 cup garlic chives, finely chopped

1/2 teaspoon white pepper

2 teaspoons sesame oil

2 tablespoon soy sauce

1 teaspoon sugar 

salt - to taste

pepper- to taste

Thai Sweet Chili Sauce Recipe:

3 garlic cloves

2 hot red peppers

1/2 cup sugar

3/4 cup water

1/4 cup vinegar

1/2 teaspoon salt

1 tablespoon corn starch

2 tablespoon water

 

Preparation Instructions

Vegetable Dumpling Recipe:

Process all the vegetables. 

In a wok or large skillet add 3 tablespoons veggie oil on medium heat. Add ginger and cook for 30 seconds. Add onions and stir fry till tanslucent. 

Add chopped mushrooms and stir from for another 3-5 minutes, untl the mushroom is tender and any liquid released by the mushrooms has cooked off. 

Add the cabbage and carrots and stir fry for another 2 minutes, until veggies are tender and all the liquid relased has been cooked off. Transfer the vegetable mixture to a large mixing bowl and allow to cool. 

Once veggies are in the bowl, add the chopped chives, white pepper, sesame oil, soy sauce and sugar. Season with salt and sugar to taste. Stir in the last 1/4 cup of Vegetable oil. 

Using pre package dumplings. Add veggie mixture to each dumpling. 

Using a steam basket over the wok, steam dumplings for 15-20 minutes. Finish them off with a quick pan fry in oil.

Thai Sweet Chili Sauce:

In a food processor blend together the garlic, red peppers, sugar, water, vinegar and salt into a puree. Transfer sauce to a pan. 

Bring mixture to a boil and simmer until the mixture begins to thicken and garlic and peppers are slightly soft, about 3 minutes. 

Combine cornstarch and water to make it slurry. Whisk in sugar pepper mixture. Bring to a boil and cook for 1 minute. Cool before serving.
